Weekly Eats

Happy Monday evening! We are winding down watching Happy Feet tonight. It was a snow day for us here in Oklahoma. (One inch--I know, we are pathetic)


So I said we eat healthy & paleo-esque. Each week, I make a meal plan & then head out to find the best prices on the best food I can get. We usually hit up the Farmer's Market on Saturday mornings, but this week--I got busy & we didn't make it. This means I spent more than the usual $100-$125 a week--the Farmer's Market has the BEST prices!

Here's what is on the meal plan this week!

Monday- Honey Mustard Chicken Thighs (The Paleo Kitchen) with "Shredder" sprouts
*They're called Shredder sprouts because my son loves Ninja Turtles & if I shred brussels sprouts in a food processor, he miraculously loves them.

Tuesday- We eat at Joey's moms house every Tuesday.

Wednesday- Bacon & Beef Stew (The Paleo Kitchen)

Thursday- Chicken Satay with Peanut Sauce & Cauliflower rice (will share my recipe on Thursday!)
*Since my parents are coming over, I'm also making Candied Bacon Chocolate Brownies (The Paleo Kitchen)

Friday- Salmon with Pomegranate & Pineapple Salsa & Broccoli (The Primal Blueprint Quick & Easy Meals)

Saturday- Spice Rubbed Pork Chops & Carrots (The Primal Blueprint Quick & Easy Meals)

Each meal generally has leftovers for lunch. I also have the joy of making my son breakfast every single morning! It's my favorite part of the day. It's usually the same thing--two eggs for both of us (cheese on mine, his plain), yogurt & toast for him. Much to my displeasure, he chooses to eat lunch at school. All the cool kids eat school lunch & I argued the point last year. He promises me to make one healthy choice every day. He's pretty good about it. I've definitely taught him healthy from non-healthy foods. He amazes me!

Right now, I'm addicted to The Paleo Kitchen by Juli Bauer (paleomg.com) & George Bryant. For the past two months, I've been planning my week around that cookbook! I also absolutely LOVE Mark Sisson. His cookbook, The Primal Blueprint Quick & Easy Meals is truly that. Quick & Easy & Delicious!! I cannot recommend these two enough.
